I have an Andrea AK5370 USB mic headset and when i plug it into the iMac the mic part works fine but I can't see an option (SysPref) to route the audio to the headset speaker - anyone have an idea how to do it?

Does that model come wth an audio jumper cable from the Mac's audio out to the USB adapter cable on the headset?

No it has two phono connectors that plug into the USB module.
