Getting rid of Cable

I really want to ditch cable, but I'm in an area where I'm lucky to get 2 channels OTA, so I don't think Eye TV is worth it. I was thinking of getting a Slingbox HD to mooch my old Directv DVR from my Mom's house, then Apple TV's for the other 2 rooms so the we don't have to fight over what to watch. Can Apple TV stream video from my Mini with Plex, or is only via iTunes and Netflix?

There is an Apple TV client that can stream from Plex. It's been developed by a third party and you need to jailbreak.
