Junk Filter Advice Needed

I am trying to filter out my junk mail. I have read that all addresses NOT in my Previous" addresses list will be filtered. So I edited the list to delete those items I want filtered.

Not only is this not happening but now more of the unwanted email shows up.

It does not appear that Mac Mail learns to filter items sent to the junk folder with a click on the Junk icon but I have to do this every time.

How can I best filter my junk automatically?
Anyone can click delete......

Using OS X 10.4.11 all updates applied.
