I don't think there is a shortcut. A work around I found back in Tiger days is to, take a Bookmarks folder and drag it to the desktop. Delete all of the bookmarks you drug from Safari. Open the folder on the desktop, and drag the bookmarks back into the Safari folder. They will then all be in alphabetical order. Since starting this thread I have discovered quite a few browser/bookmark manager apps which will alphabetize bookmark folders and bookmarks.
The one I use is... SafariSort. Small, simple, easy to use. Sweet.

Sully does all the terminal work...so you don't have to!

Kind of silly that Safari doesn't have this feature built in. I personally do not have a need for it, but I certainly can see it's value.
It's strange how Apple sometimes overlooks the simplest things.
