I am just getting back to a mac after years away and have purchased a new mini core 2 duo. I want to run xp once and a while and see several choices of software. What works best? Fusion, bootcamp or Parallels? What are the pros and cons?

There have been various online and print media comparisons of these options, and some included other options as well, such as Wine. You may want to look at some of those.

Boot Camp is a dual-boot approach. You set up a separate partition for Windows, install it, and then you boot EITHER into Windows OR into Mac OS X. As Apple ships it, you can have one Mac partition and one Windows partition, though there are ways around those restrictions.

Parallels and VMware Fusion are both virtualization tools. You normally use a virtual disk instead of a hard partition. They run Windows as a guest OS, so you have both Mac OS X and Windows running simultaneously. That makes inter-OS file transfers easier, it also requires more RAM and possibly more CPU since you're running two OSes simultaneously. PERSONALLY I prefer Parallels, but they're both good programs and which is "right" may well vary from person to person based on their specific needs, preferences, etc.

I use VMWare Fusion and am very happy. I needed to use it for a Solidworks project i was assigned at university and was impressed with how well it ran this very taxing program. Make sure you have plenty of RAM installed when using either of the virtualization programs at least 2gb.
