My Mini will arrive later this afternoon/evening and I am anxious to pop it open and get to work. However, I am wanting to know which is the best method for replacing the hard drive.

Idea #1: Do a fresh, complete install from the OS X disc included with the Mini.

Idea #2: Connect the new HD to the Mini via USB cable and Copy the internal disc to the new HD. After the copy is finished, swap the drives.

My thought is that #2 might be faster, but that it could be prone to errors while a new install might take longer but, in the end, it would be less likely to have any problems.

Any thoughts or opinions on either method?

I'll second that. You could use Carbon Copy or SuperDuper the second way, but a clean install guarantees you a better starting point.
