I have a Mac Mini as a media center

I want good sound quality, Is there a good way to connect the mini to a set of 5.1(or above) speakers? Providing there is a suitalbe adaptor to connect the mini's jack plug to a good set of speakers

Or would a surround sound set up be the only way to go

"Good" sound quality is a subjective term.

Personally I couldn't live with any self-powered speakers connected directly to the mac - a dedicated audio system is easy to connect to the mac and well worth it. The Mac's core value is in media storage and access - not sound reproduction. But then again some people think a CD player with speakers built in (otherwise known as a clock radio) is perfectly "good sound."

The only way to get 5.1 (Dolby Digital or DTS) sound out of your Mini is with a TOSLINK optical cable with a miniplug (or miniplug adapter) on one end. You also need an amp/receiver with an optical input that can also decode Dolby Digital or DTS.

Once in place, you need media with DD or DTS for DVDs and DVD Player will passthrough to your receiver, which will then decode it. It is essential that you set digital optical output from DVD Player while all files are closed, otherwise it will not let you set that option.

For other media, such as those encoded with Handbrake 0.9.2, you need to encode those files with the Dolby Digital track (AC-3), set Audio MIDI Setup to output digital audio and modify a plist file. Unfortunately, Quicktime for your Mac cannot autoselect an AC-3 track over an AAC (analog) track, like the Apple TV 2 can. So you must encode with AC-3 only, or if you encode with AC-3 and AAC you have to manually select the AC-3 track for Dolby Digital.

With analog AAC audio, the best you can get is 5-channel surround sound using the R and L stereo channels.

Not entirely true. CoreAudio will separate channels into discreet outputs for playback on firewire audio devices. I know this because I have been using an Echo Audiofire 12 for my multichannel output device for several months now. Both VLC and QT/FrontRow with Perian behave this way. It's another option.
