So while I don't need to retire the C2D mini, the i5 mini has been replaced by a Chromebox and is just sitting there.

It has 10.7, which I just don't care for, currently installed.

Would I be less annoyed by going with 10.8, or just being almost modern and getting 10.10?

What surprises would I be in store for me?

I took a C2D from Snowy/10.6 to Mav/10.9, it was OK, showing its age, but I wouldn't have gone any further.

Yos/10.10 seemed too slow to me, from what I saw happening with other "speed-challenged, older" Macs.
