I'm planning on getting the new i7 mini with 1TB drive and also the OWC kit to add an SSD. Am I correct that if I open the case and add an SSD that I will void the warranty? If that's so then I guess there is no point in purchasing the additional 2 years of AppleCare.

You will only void your warranty if you break something in the process (or at least the component you break isn't covered by warranty (because it wasn't a manufacturers defect)). Do the install, then buy your AppleCare.

or buy your apple care dont activate it you have 30 days try the upgrade if it fails put it back together then register the applecare

Apple Care is really good for MBP and MBA not for MM really. They hardly break down.
