It seems fairly likely at this point that we will see some sort of Intel based Mac be it a laptop or a new Mini. So, aren't the Intel based Macs supposed to run the next version of OS X? So are we going to see the launch of Leopard at Job's January Keynote? Question

If you mean 10.5, then no. They'll most likely be running customised versions of 10.4.4. Apple will then merge the support for each new machine into the main development branch of 10.4.4 and later (perhaps April) seed 10.4.4 for existing users.

No. Leopard will probably be the headliner for WWDC in June 2006. In fact, I would expect only a couple of minor changes to the Mac product line, a few accessory announcements and perhaps a new iPod at WWDC. The vast majority of the time will be spent going through the various new features of Leopard.

I wouldn't expect anything more than a passing reference to Leopard at MWSF - certainly no screenshots or other juice. Finally, I'd expect Mac new product announcements at special events in July, August, September and/or October 2006.

...At least, if previous experience and trends is anything to go on.
